Here are some suggestions for where you will often find a friendly face ready to share their story of the real country you're trekking through:

Forget air-conditioning and comfy seats; if you want to meet the locals you need to be where the locals are! Travel on the local buses, not the tourist versions. So maybe they break down a couple of times, or a bit of black gunge leaks through the roof, or you start to worry about catching bird flu from the chicken squawking behind you...but it will all be worth it when the lady beside you gives you a grin and talks you through the local landscape.
Eat where the locals eat. That street stall surrounded by noisy families is most likely to be more hygienic than the sedate restaurant in your hotel anyway! Open your taste buds to the real deal.
Learn some of the local language-local people appreciate it when you make an effort. It's also important to be aware of local customs, such as appropriate dress and gestures.
Ask for people's local advice and knowledge-many will be willing to point you in the direction of what you're looking for.

Healthy Breakfast Recipes

o Banana-Bran Muffins

These muffins are a great breakfast filler and sure to keep you going throughout the morning.

Makes 1 dozen muffins

Ingredients:

2 large eggs
2/3 cup packed light brown sugar
2 medium mashed ripe bananas
1 cup buttermilk
1 cup unprocessed wheat bran
1 cup whole-wheat flour
3/4 cup all-purpose flour
1 ½ teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 cup canola oil
1 teaspoon vanilla extract
1/4 teaspoon salt
1/cup chocolate chips (optional)
1/3 cup chopped walnuts (optional)

Method:

Preheat the oven to 400°F. Coat 12 muffin cups with cooking spray.

Whisk the brown sugar and the eggs in a bowl until smooth. Whisk in the bananas, wheat bran, buttermilk, oil and vanilla.

In a separate bowl mix together the whole-wheat flour, all-purpose flour, baking powder, baking soda, cinnamon and salt. Make a well in the center of the dry ingredients and add the wet mixture to it. Use a rubber spatula to combine the ingredients. Stir in the chocolate chips, if using. Spoon the batter into the muffin cases until they are rather full and sprinkle with the walnuts, if using.

Bake for 15 to 25 minutes or until the tops are brown and they spring back when touched.

Allow to cool in the tin for 5 minutes before removing to a wire rack.

Ingredients:

1 large egg
1 egg white

1 9-inch whole-wheat wrap
1 teaspoon canola oil
2 tablespoons grated cheddar cheese
1 tablespoon green or red salsa (optional)

Method:

Set your oven rack 6 inches from the heat source and preheat the broiler. With a fork, briskly mix the eggs, hot sauce and pepper together in a medium bowl. Stir in the spring onions and parsley.

Warm up the black bean dip in the microwave for 10 to 20 seconds. Place the wrap between paper towels and heat in the microwave for 10 to 20 seconds. Spread the bean sauce over the wrap, leaving a border of 1 inch.

Brush a 10-inch non-stick skillet with oil and place onto a medium heat. Add the egg mixture and cook, lifting the edges with a spatula until the bottom is light brown in color. Place the skillet under the broiler until the top of the egg mixture is set. Once it is cooked, place the omelet onto the wrap. Sprinkle with cheese, fold the edges over the omelet on two sides and then roll the wrap around the omelet. Eat immediately with salsa.

o Baked Apple-Cinnamon French Toast

Makes 12 servings

Ingredients:

1 cup chopped dried apples
1/2 cup raisins

Method:

Whisk milk, egg whites, honey, salt and vanilla in a large bowl.

Trim the crust off the 8 slices of bread and set aside. Cut the crusts and the remaining bread into 1 inch pieces. In another large bowl place the apples, raisins, nutmeg and cinnamon and toss together.

Use cooking spray to coat a 9 by 13 inch baking pan. Place the bread mixture into the pan and lay the reserves crust-less slices evenly on top. Pour the milk mixture over the bread and press the bread down with a wooden spoon to ensure that it is all evenly moist. Cover with parchment paper, then foil, and refrigerate for at least 8 hours.

Preheat the oven to 350°F.

Bake the casserole for 40 minutes covered, then uncover and continue baking for approximately 20 minutes more until it has puffed up and is lightly browned. Allow the dish to stand for 10 minutes. Dust with confectioners' sugar and serve.

Exploring the Origin of the Snow Cone

Snow cones are a classic fat free summer delight. With a bit of shaved ice and a flavored syrup, a delicious treat is made that anyone can enjoy. Despite the prominence of this treat, most people don't know how the it came about.

Surprisingly, the ancient Romans are credited with the creation of the original version sometime between 27 BC and 395 AD. Snow was brought down from the mountaintops and flavored with syrups. Though undoubtedly considered a treat, this process was laborious and would have required great speed so that the ice didn't melt before it could be consumed. In the late 1800s to early 1900s, the creation of snow cones was revived. In this instance, ice blocks were shaved down in a manner similar to grating cheese with metal shavers, and then the syrup was added to the finished shaved ice product. Hand held shavers were produced by many manufacturers in the late 1800s. Though certainly less time consuming than hauling snow down from a mountaintop, this process was still labor intensive.

The easier incarnation of these treats came about in the early 1900s. In 1919, Samuel Bert began selling modern versions at the Texas State Fair. A year later, he invented his own version of a snow cone machine, which was able to produce the treats far more quickly than in prior attempts. He continued to sell his popular cones at the Texas State Fair until his death in 1984. Ernest Hansen in New Orleans also created his own snow cone maker in 1934. His came equipped with a motor to shave the ice quickly and evenly. He and his wife created various flavors of the syrup to be added to the ice, and opened his own business, featuring his invention. The establishment is still open to this day, and Mr. Hansen continued to work there until a year prior to his death.

Ever since snow cones became easier to make, people all over the world have come to love them, resulting in new and unique varieties of flavors and serving styles. The Japanese, for example, enjoy akizuki syrup, also known as the red bean flavor. Leche, or milk flavor, is popular in Mexico. Puerto Rico tends to serve the ice in a pyramid shape. They are especially popular in tropical and island habitats due to the high temperatures year long. Snow cones have a long and varied history and are clearly here to stay.

Creating Healthy School Lunches For Kids

One of the issues moms face as they send their kids back to school is preparing lunches. Not only are they concerned with preparing food for the kids each day, but preparing healthy and nutritious lunches! This can be quite the challenge, especially with picky youngsters. We all want our kids to eat well so they can learn well, but how do we create a meal that's healthy that our kids will actually eat?

Here are a few tips and ideas for doing just that:

Think outside the lunch box. Don't just create a plain old boring square sandwich every day. Try a lettuce wrap, a tortilla roll-up, a pita, or a sandwich made with a cookie cutter or whole grain waffles (use some of the organic frozen ones) for the bread. Try various types of bread to create unique sandwiches that will be not only healthy but fun and exciting for your child to eat. Presentation is big with kids. They love to eat foods that look interesting.

Another outside the box idea is to use small plastic containers or Bento boxes to create a fun, visually appealing meal. Try veggies and bread sticks with yogurt dips or sauces. What about slices of meat and a few different cheeses with crackers? You can create your own meal that is much more healthy than the pre-packaged ones that you can buy in grocery stores. There are several websites that teach Bento - the Japanese art of take out - that have fun ideas for kid's lunches.Try browsing these for inspiration.

Be big on variety. Offer your child lots of options. This will help them to find something that they like. Include fruit, bread, a veggie, a protein source, and a drink. Try to alternate them as well instead of sending an apple daily, sending an apple one day, an orange the next, grapes the next and then swap it up. For their drinks, try a smoothie. These are easy to make and fun to experiment with.

Get the kids involved. Kids are creative and savvy moms know they are more likely to eat something they have chosen for themselves. They can even find fun ways to package the items to make them more appealing. Let them use cookie cutters to create playful sandwiches or cuts of cheese. Have fun together browsing cookbooks and websites creating new ideas for future lunches. Let them help you do some of the work in the kitchen preparing their lunch box for the next day.

Use your leftovers. Who says lunch has to be a cold sandwich and an apple? If your child loved last night's dinner and you have leftovers send them for your child's lunch. At least you know they will eat it. It saves you some work too.

Chinese restaurants in California and around the globe serve pork buns. Barbecue-flavored pork and other ingredients are cooked, stuffed inside a bun, and steamed. Little stands on the street offer pork buns as do exquisite dim sum restaurants like City View in San Francisco.

Shaped like a pig with a snout sticking out, two floppy ears, and two dark eyes, the fast food art embraced the Japanese concepts of cute and food presentation.

After seeing the piggy pork bun, I no longer went to Seven-Eleven. I started stopping at Save On. Some Save Ons sold the piggy pork bun to silent purchasers. Shiori, age eight or nine, and her grandmother, who was over 60, were two of the more vocal purchasers. Shiori, spoke first, "That pig is just so cute!" They talked at length about the cute floppy ears, the cute snout, and the cute pig shape.

Returning to bun offerings, the smallest menu on the web, at Ministop, shows seven different buns: Two varieties of pork buns; two varieties of an buns; a spicy seafood bun made from shark fin, shrimp, and an flavored with oyster sauce and other ingredients; a shrimp and pork bun flavored with salt; and for dessert, a Belgian chocolate bun.

Family Mart shows 11 different options including pizza, curry, and a variety of pork and an buns. One of the pork buns is a spicy bun, including kimchi while another uses the same kind of pork slices as you can find in bowls of steaming hot ramen. The completely new variety Family Mart offers is a yakisoba bun. Yakisoba is a fried noodle dish in Japan that is somewhat like chow mein. The bun is simply stuffed with fried noodles. Lastly, for desert, you can buy a pudding bun.

I have never tried the desert versions of the buns, nor have I heard people speak of them. I remember the ice cream trucks of the suburban phase of my childhood, hearing them from far away, worrying that getting money from my mother and getting back would take too long, but inevitably making it back on time for a piece of cold childhood delight. Americans talk of the ice cream trucks and they live on in our memories. Japanese speak of the sweet potato trucks that sell baked sweet potatoes. While sweet desert buns are sold almost everywhere in Japan, they are not yet fond childhood memories or the stuff of popular culture. Maybe they will be some day.

The Seven Eleven menu presents 13 different buns including many varieties of pork and an buns as well as two pizza buns, one featuring melted cheese. Normally, a pizza bun refers to just the red pizza sauce without any cheese. Seven Eleven also offers two pink desert buns called Sakura Buns which include an and other ingredients. The buns are named after cherry blossoms; sakura is Japanese for cherry. For a different desert, Seven Eleven offers three small buns together, one white, one yellow, and one brown for about the price of a regular bun. Each bun is a different flavor: salty caramel, maple syrup, and chocolate.

The Circle K Sunkus menu lists 14 different buns including a variety of pork buns and curry buns. The curry buns include a chicken and cheese curry bun and a cheese curry bun. Like Seven Eleven, Circle K Sunkus has mini buns too.

In most of Japan, you are never far from a convenience store. Steaming hot buns await in winter, but very few convenience stores offer the full menus. The cases used to heat the buns may just not be big enough.

Freezable Breakfast Tacos - Easy Breakfast Idea

Looking for a quick and easy way to tackle the breakfast rush? The key to eating a nutritious breakfast is planning ahead. On busy days, it is great to have these in the freezer, ready to microwave and go.

1 dozen eggs

½ cup milk

Salt and pepper to taste

1 package frozen hashbrowns

1 pound breakfast sausage

1 jar salsa

8 oz shredded cheddar cheese

8 oz shredded monterey jack cheese

20 flour tortillas medium size

You will need parchment paper and ziplock bags for wrapping and freezing

1. Prepare the hashbrowns according to the package directions.

2. Fry the breakfast sausage.

3. Scramble the eggs with the milk and salt and pepper.

4. Mix the hashbrowns, sausage, and eggs in a large bowl.

5. Mix the cheeses.

6. On a square of wax paper, place one tortilla.

7. Place several tablespoons of hashbrown, sausage, and egg mixture onto the tortilla in a line, slightly off center. Amount used will depend on the size of your tortilla, but do not stuff too full.

8. Add a Tablespoon of salsa thinly along the top of the egg mixture. Sprinkle cheese on top of all.

9. Fold the ends gently in, then fold over one side and roll up.

10. Roll up in parchment paper, place into ziplock bag, and repeat with next tortilla.

11. Place the tortillas into the freezer.

12. When ready to eat, place tortilla into microwave on high for one minute. Add 1 minute for the second tortilla, and 30 seconds for each additional tortilla.

Now that you have tried this recipe, be creative. Perhaps stuff the tortillas with leftover mashed potatoes and roast beef. Try ham with macaroni and cheese. Use your imagination and your leftovers to create healthy breakfasts that can be ready in a minute. Enjoy!

1/4 c. lemon juice

In a large bowl, blend all of the above ingredients. Chill for 2 hours. Makes 14 (3/4 cup) servings.

Watermelon Smoothie

2 c. seeded watermelon chunks
1 c. crushed or cracked ice
1/2 c. plain yogurt
1 to 2 tbsp. sugar
1/2 tsp. ginger
1/8 tsp. almond extract

Whip ingredients together in blend until smooth. Serve immediately. Makes 2-3 servings.

Delicious Frappe

1/2 large watermelon
36 ozs. Ginger Ale
1 (12 ounce) can frozen limeade concentrate, thawed
Lime & Lemon Slices (fresh & sliced)

Remove seeds and rinds from watermelon. Cut melon into chunks. Combine melon, limeade and ginger ale in blender. Freeze for several hours. Thaw partially to serve. Spoon into tall glasses and garnish with lime or lemon slices. Makes 1 gallon.

Melon Guava Smoothie

1 1/2 cup watermelons
1 cup guava juice or guava nectar
1-2 cup ice

Mix the above ingredients together in your blender and blend until smooth. Serve in chilled glasses.

Hoi An, Vietnam - Top Ten

Hoi An

If you fancy upgrading your wardrobe with shiny new threads, Hoi An is the place. Every other shop in this small, perfectly formed central Vietnamese town belongs to a tailor who will happily whip up a pair of slinky pyjamas or a silk kimono ('made-to-measure, Visa or Mastercard'). It will be made from the fruit of locally bred silkworms and, with luck, will fit perfectly and carry no size tag.

This fashion hub and Unesco World Heritage Site has long been a class act. In the 16th and 17th centuries, it was an international port called Faifo swarming with Chinese and Japanese merchants. Today, the exotic trader influence shines through in the shrines, silk shops, bridges and quaint tile-roofed wooden houses.

Because many of the downtown streets are closed to cars and even motorcycles on some days, they are great for a wander. Although most shops target tourists, unusually for Vietnam, much of the town has been conserved. A heritage time capsule, this living museum of Vietnamese culture offers visitors the tranquility many need as an antidote to the mania of the country's cities, and from their lives back home.

The limited development that has been allowed has unfolded sympathetically, resulting in a minimum of tower blocks and karaoke parlours and a general lack of tat and tack. It feels "boutiquey" rather than "souveniry", to echo one observer.

When you tire of the lanterns, kites and looms, there is no need to pack up and leave. Just beyond the fringes of this most picturesque of towns, you will find plenty of momentous attractions, if little in the way of golf, although the area has five world-class courses in the pipeline.

Tempted? Hoi An is just down the road and is far quieter than Hanoi. Instead of honking horns and revving motorbikes, the prevalent sounds are whirring sewing machines, clinking chisels and softly shuffling flip-flops topped by sibilantly humming voices.

Give in to the temptation to fall into a trance, but try to snap out of it when you take a taxi, as you are still in the most commercial of countries. Confirm the cost and destination. Otherwise, expect to arrive at the wrong hotel, to be charged way too much and then to be stung for extras, such as for having too many shopping bags or for any other reason your driver can concoct, such as being a large person, or your belt causing wear-and-tear on the upholstery.

Finally, ensure you have plenty of traveller's cheques or stacks of cash. The reason: as in much of Vietnam, the ATMs have the distressingly capricious habit of, like casino one arm bandits, dispensing cash at random intervals or not at all.

For wireless internet access on what some Vietnamese call your 'toplap', try the Hai Scout cafe at 111 Tran Phu Street. Alternatively, try another old quarter stalwart, the chic and bare-bones Art Cafe at 30 Thai Hoc Street, which is a good place to relax and soak up Hoi An's ample atmosphere. "It nice," as the sign says.

Simon Ramsden lists the top ten attractions in or near a town with four UNESCO World Heritage sites within easy reach:

1. Japanese Covered Bridge
Surprisingly short and stocky, Hoi An's most famous landmark has a tall story behind it. The story begins with a monster called Cu, which was so big it had its head in India and its tail in Japan. The products of its nether regions, which are situated over Vietnam, have been credited with most of what is good, and bad, in the country's history.

In the 1590s a covered bridge was built in Hoi An to link the Japanese side of town with the Chinese quarter. According to the story, because the bridge spanned the weakest part of the monster, the pressure killed it. Hence the shrine of atonement halfway across.

As if that legend were not odd enough, one entrance is guarded by a pair of monkeys and the other by a pair of dogs.

2. Hoi An Harbour
To see the harbour at its most magical, rise at daybreak and go to the bridge. A guide will take you out on a wood-boards-and-peeling-paint ferry for a fresh, laid-back take on the town. Bobbing and lolling around, you may feel that you have stepped back in time to the age of Marco Polo.

3. Tran Family Worship House
Ringed by a garden and high fences, the Old Town house could more accurately be described by a bourgeois word you are still not meant to use. Infused by Chinese and Japanese influences, the temple, sorry house, was constructed by a mandarin named Tran Tu Nhac.

Intriguingly designed, it splits into the main worship part and an annex for family and guests. The worship hall has three doors, each for a different type of visitor.

The left door is for men, the right for women. The middle door, for the grandparents, is opened during the Tet new year festival and on other celebratory days. If the place feels too rigid for your taste, try Phuc Kien Pagoda - the assembly hall-cum-temple for Chinese from the Fujian province who worship the Fujian god Tien Hau.

4. Cargo Club Restaurant and Patisserie
One of the joys of Hoi An is the eccentric English displayed on menus. Think "grilled tofu with grass" and "banana pancake with bile honey".

Set in an ancient, two-storey shophouse on one of Hoi An's liveliest streets, the Cargo Club at 107-109 Nguyen Thai Hoc Street serves up a few linguistic oddities of its own, including 'alsatian baguette'.

Nonetheless, the food is reliably delicious and diverse. The repertoire includes everything from spicy seafood noodle soup to roasted fennel and goat cheese salad. Adding to the attraction, the club has chic dark wood decor and a balcony that commands sweeping views of the harbour.

To get so close to the water that you could drink it, try Citronella Cafe at 5 Nguyen Thi Minh Khai. But stick to the bottled water. For the purest water you can find, visit any of the stalls and cafes that sell green coconuts, where the vendor will hack one open for you with a machete. The coconut is free, but expect to pay for the straw to suck the juice out with.

5. Zen Spa
Founded to promote traditional Vietnamese therapy, Zen Spa (zenspa.com.vn) has two local branches. One, at the Hoi An Hotel, is right in the heart of town. The other, at the Hoi An Beach Resort is further out, by the seaside. Pampering services that come under the Zen Spa brand include facials, foot treatments, body scrubs, Pearl of Asia (incorporating exotic Thanh Long or 'dragon fruit'), Heaven and Earth (gentle body scrub with a great coconut aroma), The Five Elements ('fresh herbals and silver coins with ginger wine') and Forever Together ('fresh leaves and herbs'). Different.

6. Cua Dai Beach
So much appears in print about Hoi An's old quarter that the visitor may forget that the town lies beside the South China Sea. Fringed with palm trees, Hoi An's beach, Cua Dai, boasts clean white sand that stretches all the way to Danang and is short on hawkers: a blessing in a country where you are far too often assailed with the demand "You, buy my things."

7. Marble Mountains
These mountains are named after the crystalline metamorphic limestone from which they formed. Blessed with soaring, incense-filled caves and pagodas, the Marble Mountains have seen it all, fulfilling roles at various times in its history as a temple complex, battleground and hospital. In the latter of these roles injured Vietcong would convalesce whilst watching the ant-link figures of GI's playing on the beach below, oblivious of the enemy's presence.

The king of the Nguyen Dynasty, Vietnam's last ruling family, named the mountains after the five elements that make up the universe: (metal, wood, water, fire and earth). If you want to become at one with the universe, in characteristically business-like Vietnamese fashion you will be charged a small entry fee for each of the five elements with which you wish to harmonise.

8. My Son Sanctuary
The Unesco-listed My Son Sanctuary, often described as a Hindu holy land, rests in a remote jungle valley ringed by two mountain ranges. My Son once hosted the religious ceremonies of kings of the Champa dynasty, which ruled southern and central Vietnam from around the 7th century to the 19th. Unfortunately most of it was obliterated by the US Air Force in the war, but what remains is interesting, if only because the Hindu relics seem so out of place this deep inside Indochina.

The sanctuary consists of a string of semi-ruined but imposing tower-temples built by means that modern architecture does not understand. Often likened to the Cambodian temple complex Angkor, which the Champa sacked, My Son is a spooky place as awash with butterflies as with the spirits of the dead.

One of the strangest sight you will see in its grounds is the two American bomb casings dating back to a 1963 raid. The casings' shape echoes the deliberately phallic stone columns scattered around the sanctuary.

9. Phong Nha-Ke Bang National Park
The karst (limestone crag) configurations at Phong Nha-Ke Bang National Park stem from 400 million years of geological upheaval and growth. To get a sense of how slowly Phong Nha-Ke Bang evolved, consider that it takes a century for any of the stalactites or stalagmites to grow a single millimetre.

This Unesco site ranks as the oldest major karst area in Asia. It is big, too. Radiating from the border with Lao, Phong Nha-Ke Bang comprises 65 kilometres of caves and underground rivers. An adventure sports playground with a promising future.

10. Cham Museum, Danang.
This museum houses the world's finest collection of Cham sculpture and is a glorious testament to the artistic achievements of the Kingdom of Champa. The sandstone carvings of gods, beasts and celestial dancing girls possess exquisite beauty and grace and are so liberally displayed as to make it a challenge to fully appreciate this enchanting museum in a single visit.

My Chinese Recipes - How to Make Noodles With Spring Onion Flavored Oil

I would like to start with My Chinese Recipes first and hope they will give you some new sights from Chinese cooking. I love noodles since I can add many flavors on it, both on top of the noodle or in soup. Coming recipe is a Shanghai flavor, recommend to serve with 'Spareribs in Shanghai Style'.

Ingredients:

4 oz Shanghai noodle (or any Chinese noodle, dry weight)
6 stalks spring-onion
1/4 cup oil
3 tbsp dark soya sauce
3 tbsp water
1.5 tsp sugar

Methods:

1 add 1 tsp salt in a pot of hot water, cook noodles, remove and refresh with tap water, drain well
2 rinse and cut spring-onion into sections
3 heat the oil, fry spring-onion in medium hot oil until golden brown and crispy.
4 RESERVE spring onion, leave 2 tbsp behind
5 add 1 tbsp dark soya sauce and 1 tbsp water, 0.5 tsp sugar and mix well, add spring-onion to the sauce and fry until well flavored, remove
6 heat the remaining 2 tbsp dark soya sauce and 2 tbsp water, 1 tsp sugar and mix well.
7 add noodles and toss evenly, sprinkle with 1 tbsp of spring-onion flavor oil, and SERVE.

If you found nothing from your refrigerator, just got noodles and spring oil left from your last dishes, try this recipe. No meet is needed. Your will find the original flavor from spring-onion, an important ingredient in Chinese cooking.

Where Do Your Cultured Pearls Come From?

Origin of Cultured Pearls

Kokichi Mikimoto, son of a Japanese noodle vendor, single-handedly changed the pearl landscape forever by discovering the best way to produce them artificially. He and his wife struggled in the 1890's to learn the best materials and methods for nucleating (implanting) oysters, disregarding the ridicule of Japan's pearl experts. In 1908 he patented the world's first cultured round pearl.

However, naturals were the most desired gem in the years between WWI and the stock market crash, and women bought all the natural pearls they could afford. The stock market crash and the subsequent pearl crash devalued the high prices of naturals (sound familiar?). Naturals never regained their market share. WWII throttled pearl production, creating huge demand for cultured pearls in the postwar prosperity years.

At its height Mikimoto Company had more than 12 million oysters producing 75% of the world's cultured pearls. The Mikimoto name has been synonymous with very high quality.

The company found that the best luster and appearance occur at.35 millimeters of nacre, and Mikimoto pearls are thicker, since they were left longer in the oyster. The more luster, the higher the value. Perfect round shapes are more valuable than oval or irregular shapes.

BIWA Pearls

Around 1935 pearl experts found that a pearl will form around a piece of soft tissue introduced from another mollusk. These pearls have no artificial nucleus inside. The resulting pearl has an unpredictable flat, pointed, or button-shaped appearance. Coin pearls are also the result of this process. Their luster is excellent. They were first cultured in Lake Biwa in Japan. The name "biwa" indicates the absence of an artificial nucleus.

Grilled vegetable recipes are usually served hot but in Japan they are often known as "yakinasu" and served chilled. Your vegetables take on all the great things about being grilled, such as the enhanced flavor and the attractive grill marks if they are sliced, but chilling the vegetables after cooking them makes them a refreshing side dish for a hot day.

You can serve this grilled eggplant recipe as a side dish with any kind of meal. You do not necessarily have to serve them with an Asian meal.

Since they are chilled, you can also make them in advance and keep them in the refrigerator to serve a few hours after grilling them. The following recipes makes two servings, so feel free to double it. It is a very simple recipe but really tasty.

You can get dried bonito flakes from an Asian grocery store. Japanese eggplants are actually from China originally. They are small and round, as opposed to the Indian eggplants which can weigh up to two pounds. Use the smaller ones in this recipe.

What you will need:


4 Japanese eggplants
2 tablespoons dried bonito flakes
2 teaspoons grated fresh ginger
Soy sauce, as needed

How to make it:

Preheat the grill to medium hot and grill the eggplants until they are soft and the skins are very charred. Let them cool in water and remove the skins. Dry them with paper towels and take off the stems. Chill them in the refrigerator and serve them with the grated ginger and bonito flakes on top. Add a few drops of soy sauce to taste and serve.

What Are the Best Foods For Dieting?

The best foods for dieting don't come in a can or a frozen foods container. They're found right in the produce section, the canned good aisles and the refrigerator sections of your local supermarket. It can be tempting to use frozen Weight Watchers or Jenny Craig meals to jumpstart weight loss, but too often these food snacks contain extremely high sodium levels and extremely low nutritional value (compared to their raw foods counterparts). Time and time again, processed foods disappoint us by containing harmful elements like trans fats or acrylamide. Eating healthy and losing weight isn't rocket science; it is knowledge that we must take a moment to assimilate.

Grapefruit is one of the best foods for breakfast or lunch snacks, according to the Nutrition and Metabolic Research Center and Scripps Clinic. Eating just half a grapefruit before each meal (or drinking a serving of grapefruit juice three times a day) helped dieters lose more than three pounds over 12 weeks. The phytochemicals in grapefruits reduced insulin levels and forced the body to convert calories into energy instead of fat, the center found. Also, adding a high-fiber cereal will cut cravings and deliver a healthy diet dose of nutrients that promote heart health, bone health and mental health.

For lunch, the best, healthy foods can be typical or slightly surprising. Salad is an obvious choice for eating healthy, as it is low in calories, not to mention high in vitamin C, E, folic acid, lycopene and disease-fighting carotenoids. In a Penn State study of 42 women, not surprisingly those who ate a big low-cal salad ate 12% less pasta afterward. Many diets also say that beans are excellent for weight loss, appetite suppression, keeping blood sugar stable and lowering cholesterol. Chicken noodle soup and tofu are other less-noted appetite suppressors. Hot red pepper is an item you may not routinely think of in weight loss but a Japanese study found that the ingredient capsaicin helps to suppress the appetite and increase metabolic rates.

The best foods for snacking run the gamut from pears to nuts. According to the FDA, there are six grams of fiber in a medium-sized pear, which will help fill you up. Apples, with three grams of fiber, is another savvy choice. Nuts may be higher in calories (a handful contains 165), but a Purdue University study found that those who snack on nuts are slimmer and healthier. Those who ate 500 calories worth of peanuts each day, consumed less at meals, had 11% faster metabolic rates and gained added disease-fighting benefits. For instance, walnuts contain cancer-fighting omega-3 fatty acids and just 10-20 pecans per day has been shown to reduce heart disease risks.

Carrot Soup - Diarrhea Recipe

There are many causes to diarrhea: virus, bacteria, germs, bad food, antibiotics, excessive intake of laxatives and so on. There are plenty of remedies to diarrhea, and some are better than others. But one that is 100% natural, easy to make, cheap and effective is: carrot soup.

It supplies water to combat dehydration while replenishing your body with sodium, potassium, phosphorus, calcium, sulfur, and magnesium. It also supplies pectin, and coats the intestine to reduce inflammation. Moreover, it will prevent vomiting and any growth of harmful germs inside the intestine.

This carrot soup recipe is not the traditional soup recipe your grandmother used to cook. In fact, you will only need the juice from the carrots, as you do not want to give anything solid to someone who has a diarrhea.

What you need:

A large cooking pot
A strainer
2 pounds of carrots, peeled and sliced
1 cup water
1 teaspoon salt

First, peel the carrots and slice them. Then heat the carrot in 1 cup of water in the cooking pot over medium heat and bring to a boil. Reduce heat and simmer 25-30 minutes, until the carrot is tender. Mash the carrot thoroughly and add 1 1/2 cup of boiling water. Bring to a boil again, then simmer for an additional 15 minutes. Place the strainer over a large bowl to retrieve the carrot juice, then pour the mixture into it. Press the mashed carrot with a fork to retrieve as much carrot juice as you can.

Give 3/4 cup of carrot soup to the patient every 20-30 minutes.
