How To Make A Quick Meal

Making money online, or at least wanting to, can take up a lot of valuable time.Often before you have finished one money making course, you are told it is a scam, and then start another money making course, and with every course are oodles of free courses to motivate you to a decision and buy that new course...There always will be time needed to eat though, unless you want to die poor and hungry?

Everything should be quick, you feel. Quick! even if you do make money ,is not really a 'Great Ultimate Dream!'

Not that dreams should aim for that anyway. But instant anything, and that usually means food, and food usually means instant noodles. Instant noodles, though nice , are usually wheat based, and the recipe we have, uses buckwheat. Buckwheat, also called 'Soba', has more goodness, and may keep you going with more stamina too.

Using a packet of dried soba noodles, bring a pot of water to the boil, and put a little over half of a 200g packet in for one person.

Swirl the boiling water around, which will catch the sticks of soba. This will soften and bend them,to bring them down into the water . You don't want them dried and sticking up half way out of the pot.

Sometimes everything bubbles up and over.So you cant walk away.

If the soba is 100% made of buckwheat, called 100% soba, then you have to get ready to add in some cold water to get it off the boil. Then you have to watch that does not reboil up and over the rim of the pot again.100% soba seems to make the water more frothy than those without other flours added.

A lot of soba noodles have wheat added. Some have Yam flour added. This does make it easier to cook.

Green tea soba is made with green tea as the liquid used .This also is made with wheat or yam flour added.

What was amazing, was seeing handmade soba being made in Japan (on TV).
It was seen in a show by an English food guru, Jamie Oliver.

In my shop, handmade noodles imported from Japan are so thin, and so straight, and so even in thickness.I just think to myself,"No way, they can't possibly be handmade???"There has been so much consummate skill used, to get such a, well, machine made look? But the value is surely in the energy and love imparted to the product.Never mind anyway, you can just buy the machine made one.But it does remind me of the artisan potters in Japan whom make their pots just a little off so that they are not ordinarily perfect, if you can understand that?

This noodle cooking is fairly quick, but I still have my cool little sauce to add. This is fitted in between the few things to do preparing the noodles. If you have some leftovers, last night's roast meat , or canned things like vegetables in brine. Or you can cook some vegetables, soaked, dried mixed fungi are best. With cans, you can get those what I call Brain mushrooms, because they are good for the brain evidently. Specifically they are called needle mushrooms , or enotaki.

For adding as a garnish, check out packets of Asian pickles, specifically Japanese ones, of which there is a range of types. Or try looking up Chinese szechuan cha chai.Check out Korean KimChi, in one of its many forms. Usually it is chilli cabbage though. Wasabi can be added to a corner of your dish too,but be warned that it can blow a few cobwebs out,and it would not go with non Japanese pickles, though. It has a strange 'hot/ coolness', and it tends to rush rather too quickly up your nose for some reason. Some say that the effect is like that naughty substance that idle superstars indulge in Except this will be healthy. Be at peace that the effect does not last long, so it is not like chilli wherein you may suffer for a few minutes.

Pickled ginger would be nice to cleanse your palate with before eating, and if you use pickled stem ginger and slice it thin like a famous chef, then a few slivers on top will be quite attractive, and will add nicely to flavours.

Various add ons should be at different times, because this dish is best plain and simple, without all of the above all added at once.

Inappropriate in some towns, but a raw egg can be cracked and left on top. This texture difference and the protein addition, and pure flavour of the egg works as a foil to the sauce in the noodles.
Inappropriate, sometimes because of salmonella and bird flu questions.

Dried preflavoured Nori seaweed may be bought if you want to be flash, and add a little quick vegetable greenery. You may want to diligently cut it into slivers with a pair of scissors or a very cheffy knife, but this is supposed to be a quick dish.

My sauce usually has a favourite oil.Pumpkin seed oil is no longer available in our shop .It probably wont even be available in my country,it was just not popular. So I possibly have the last bottle around these parts.

You, probably could use peanut oil. Before adding, heat it up with a bit of fresh root ginger. The oil makes the soy sauces and oyster sauce that we will add less concentrated. Frying ginger in the peanut oil just seems to improve flavours. You can make this at any time and just have a pot of it around ready for use.

At one stage in western history, ginger was the top value trading item.Value in weight, far more than tea or silk in Olde Imperial English times.

Now, In a little bowl, add some Japanese soy,or some Chinese light soy.Add dark Chinese soy,and a little oyster sauce.

The Japanese soy can be shoyu, or Tamari, or, low salt mild Japanese soy.

Shoyu is where more liquid than whole mashy beans are left in the mixture, and Tamari is the exact opposite, where there is a little juice over the beans, and the beans are called Miso.

OK.

Stir around, and add the oil plus a little sugar,or I use Xylitol which is a natural sugar substitute. It is made from Rice Bran.

Ready to go,keep this to one side to pour this all over your soba noodles when they are ready.

So get a single strand of soba out of the boiling water with a pair of chopsticks. Bite into this after shaking off the water. It won't be too hot.

If it seems soft enough, after finally trying this a couple of times every so minutes, it is ready. If it was left alone, your soba could end up over cooked and too puffy.

Give the soba a little rinse with a colander, under cold water.Put soba into a nice soba bowl, add the

sauce , then the raw egg, and then the other bits and pieces and pickles or seaweed.

You are welcome to eat this with loud slurps.

Funny Linguistic Misunderstandings to Make You Laugh

We've all had unfortunate or unexpected adventures during our vacations in other countries. Sometimes these can be very amusing. We've been collecting such funny stories on our website, from all over the world.

Here are some real-life examples of "faux pas" and misunderstandings which can result from cultural differences:

o "Constipado" in Spanish means "to have a cold" - nothing like what it sounds like in English!

o If you are female then don't say "estoy embarazada" thinking it means that you're embarrassed. Far from it, it actually means "I am pregnant"!

o If you innocently ask a German "Bist du heiss?" (literally: are you hot?) to comment on the weather, he/she may get totally the wrong idea!

o For any Americans visiting England, please remember that "pants" in British English are underwear, not trousers!

o Do you like Chinese food? If so, be careful what you ask for in a restaurant because the word for sugar and soup apparently sound quite similar!

o Some misunderstandings go beyond language. In Japan it's polite to slurp loudly while eating noodles to show your hosts that you appreciate them. Try that strategy in England or the USA and you might not get invited back!

o In many parts of England "having your tea" can often mean "eating your evening meal", as well as simply drinking a cup of tea.

o In Spain, asking for "salmon a la plancha" means "grilled salmon" not as one restaurant menu translated it, "ironed salmon" (since the word "plancha" in Spanish also means an "iron" for pressing clothes!).

The above examples give you only a small taste of the many potential cultural and linguistic pitfalls which exist worldwide. Only by learning about other languages and cultures can we hope to bridge the divide and make the world a better place.

If you have any amusing language-related anecdotes or incidents to share then please get in touch. You may even feature in a book we're publishing later this year.

Spaghetti With Eggplant, Fresh Tomato Sauce and Basil

This is our California Central Coast version of an Italian classic, Pasta a la Norma. The traditional recipe calls for the addition of Ricotta Salata to the sauce which I prefer to omit. We are tomato-holics! When fresh tomatoes are in season, I want nothing in my sauce to mask the taste of fresh tomato and fresh basil --a match made in heaven!

I also like to grill the eggplant rather than deep fry it. I prefer to use Japanese eggplant which when sliced vertically and left attached at the stem yields a better "bird-in flight" appearance. You could also use small regular eggplant if you can't find the Japanese version.

This sauce is best made with fresh tomatoes. If it's off-season and you can only find hothouse tomatoes and they aren't quite sweet enough, bring them up in taste by using a bit of tomato paste or white wine.

Cooking time: 20 minutes / Makes 4 servings,

Ingredients.

4 Small firm Japanese eggplants*, do not peel
3 to 4 medium cloves garlic, minced
2 lbs. fresh tomatoes, seeded and chopped
1/2 cup basil leaves coarsely chopped
1/4 cup extra-virgin olive oil for the sauce plus extra for brushing the eggplant
Salt to taste
Several grinds fresh cracked black pepper
1 lb. of spaghetti
Parmesan cheese for the table

*Note on preparing eggplant. Though recommended by some, I have never found the need to salt the sliced eggplant and leave them for an hour to drain off the bitter juices. Perhaps the fresh Japanese eggplant, which is what I use, is less bitter or my guests and I are not bothered by a little bitterness.

Preparation Directions.

To give the affect of a "bird-in-flight," using a sharp thin cutting knife, slice the eggplant into four to six thin even thickness horizontal slices, from the rounded bottom --length-wise almost to the other end, but not through, leaving the top of the eggplant intact.
Lightly brush in between the slices with olive oil, then grill on a barbecue or fry on a stove top, brushing on a bit extra olive oil if necessary. While grilling, when the eggplant has softened a bit, gently fan out the slices like a Japanese fan and salt and pepper each "bird." Grill on both sides until lightly browned. It is OK to flip the eggplant a couple times to get a nice grilled finish.
To make the sauce, pour the olive oil into a large (non-reactive) sauce pan. Heat the olive oil just a bit, then add the garlic. Sauté over medium-low heat until the garlic is lightly golden and fragrant. Do not burn! Add the chopped tomatoes and bring up to simmering. Add the chopped basil and stir then simmer for several minutes. Taste the sauce, and if the sauce is not sweet enough, add a bit of tomato paste or white wine, then simmer a bit more. When done, add salt and pepper to taste.
Meanwhile, in a large pasta pan or stockpot, boil water. Just before adding the spaghetti, add a tablespoon of salt to the boiling water. Add spaghetti, and cook according to instructions until just done. Remove the pasta, drain well, then mix the paste with the tomato sauce.
Divide the sauced pasta between four dinner plates. Carefully top each pasta mound with a grilled eggplant "birdin-flight". Add a small sprig of extra basil to each plate for garnish and serve.
Offer grated Parmesan cheese at the table. (You don't want to put the grated cheese on before because it will hide the eggplant "bird-in-flight affect.)

Wine and Food Pairing and Serving Suggestions.

Wine suggestion: This is not a fussy sauce. On a warm summer evening a chilled fresh dry white like a Roussane or Vigonier would work wonderfully. Or be traditional and serve a young Sangiovese or Chianti with this Italian "mama-style" dish.

Parmesan Crusted Sole with Lemon Beurre Blanc

Sole/flounder is a refreshing sweet and mild flavored fish which allows it to be used in a variety of ways. With its long thin flesh, sole is often stuffed or used in other extravagant plate presentations. Because this fish is very thin it's a great choice to pan fry for a quick meal. Parmesan crusted sole is the best of both worlds, it's eloquent and fast. You can make it look even better with some fresh chives, tarragon or basil. Even if you don't like fish, you'll love this recipe.

Serves 4

4 ea. Sole fillet (6-8 oz) - if the fillets are small use 2 per serving

1 ½ cups Panko (Japanese bread crumbs)

½ cup Grated parmesan cheese

4 Tbsp. Parsley - minced

½ tsp. Granulated garlic

¼ tsp. Kosher salt

½ tsp. Pepper

½ cup Flour - all purpose

3 ea. Eggs

1 cup Milk

4 Tbsp. Butter

4 Tbsp. Olive oil

1 cup Lemon beurre blanc

In a food processor blend panko, parmesan and parsley until fine. Transfer to a shallow pan. In a separate pan whip eggs and milk until well combined. In a third pan place the flour.

Take the sole fillets and season with salt, pepper and granulated garlic. Dredge sole in flour, then egg wash and finally in the parmesan/panko mix. Pat the parmesan and panko into the sole until the mix sticks to the fish.

In a large sauté pan heat butter and olive oil until hot. Carefully place sole in the pan and shake the pan to make sure the fish doesn't stick. When sole is golden brown, flip over and continue to cook. When sole is done (120° F internally), transfer to plate and top with lemon beurre blanc.

Lemon Beurre Blanc

Yields 1 cup

1 cup White wine

1 Tbsp. White wine vinegar

1 Tbsp. Shallots

4 Tbsp. Heavy whipping cream

¼ lb Butter - unsalted, chilled, cut into cubes

2 Tbsp. Lemon pulp - chopped (see note)

1 tsp. Lemon zest - minced

1/8 tsp. Kosher salt

1/8 tsp. White pepper

In a sauce pan over medium high heat, combine wine, vinegar and shallots. Reduce until almost a syrup consistency. Add cream and continue to cook reducing by half. Turn the heat to low and add butter cubes 2 at a time while stirring until all the butter is added and sauce is a creamy consistency. Season with salt and pepper.

Note: If the butter is not chilled it will not incorporate into the sauce. Also if the wine mixture is not reduced far enough the sauce will be runny.

Note: To make the lemon pulp, cut off the rind including the white part. Cut between the sections removing just the pulp. At the same time removing any seeds. Place the pulp and any juice in a cup. It is also a good idea to zest the lemon first.

Quick Snack Ideas For Kids

Are you looking for some quick and easy snack or lunch ideas for kids? Here are a few of our favorites that are not only healthy alternatives to fast food and sugary snacks but much easier on your budget.

Make a boring sandwich fun by cutting shapes with cookie cutters. From peanut butter and jelly to chicken salad made with last nights leftover chicken, the kids will enjoy the fun shapes. Boost nutrition by using whole grain bread.

Do you have some leftover spaghetti sauce from last nights dinner? Spread it over lightly toasted bagels or English muffins, top with cheese and put in the oven or toaster oven at 350 until the cheese is melted.

Most kids love fresh fruit. You can cut up a variety of fresh fruit into bite sized pieces for a delicious fruit salad. Melons, grapes and berries are especially good in the Summer. Another great idea is to throw a few frozen berries, bananas and a little juice or soy milk in the blender for a healthy smoothie that the kids will enjoy.

We always have those teddy bear shaped graham crackers in our pantry. Spread peanut butter between the two for a healthy treat (great alternative to store bought cookies).

You could create a delicious snack mix out of ingredients you have in your pantry. A half cup of cheerios or other low sugar cereal mixed with a box of raisins is a simple snack for little ones. You could even throw in a few chocolate chips for a special treat that is much healthier than cookies or candy. Even the pickiest eaters are more apt to try if you leave a bowl of this on the table.

These are just a few ideas to keep meal and snack times interesting for kids. Check out your pantry and you may even come up with some creative snack ideas on your own.

Simple But Interesting Ideas For Different Types Of Pizzas

Pizza is an incredibly diverse dish and you are only limited by the ingredients you have on hand and your own imagination when it comes to making different types of and varieties of this beloved favorite.

We usually think of red tomato sauce, mozzarella cheese, and toppings like pepperoni, sausage, or mushrooms when it comes to pizzas but you have your pick of ingredients to use for making this widely popular dish most of us have eaten at one time or another. If you do not have the time to make your own dough, use the store bought variety, although you may have to compromise some of the taste as most cannot compare to the fresh kind you knead yourself.

Although pizzas are typically eaten for lunch and dinner, breakfast pizzas can be a delicious alternative. Use frozen or fresh dough or even dinner rolls as the crust and load your pizza with sausage, cheese, and shredded hash browns for something really different for breakfast. Vary the type of cheese you use and try using ham or bacon along with or instead of sausage.

Sausage can also be used for a Mexican inspired pizza that is full of spices and hot ingredients such as chipotle and jalapeno peppers. You can also use salsa on top of pizzas instead of tomato sauce along with the toppings of your choice and shredded cheeses.

Pizza does not always have to be loaded with fatty meats or high calorie toppings as you can also use low fat or fat free cheeses as well as a variety of vegetables for a filling meal.

For a different but still Italian inspired pizza use seasonings such as basil and oregano along with an alfredo sauce instead of the usual tomato sauce. Top your pizza with shredded chicken, sun dried tomatoes, mushrooms, and plenty of mozzarella cheese.

Spaghetti Pizza Recipe

What You Need

1/2 pound spaghetti noodles, cooked
1 egg
1/4 cup milk
1 pound ground beef
1/4 cup onions, chopped
1 large can tomato sauce
1 package garlic and herb flavored salad dressing mix
1 cup mozzarella cheese, shredded
1/4 cup parmesan cheese, grated

How to Make It

Cook the spaghetti noodles according to the directions on the package.

Preheat the oven to 350 degrees Fahrenheit.

Coat a 12 inch pizza pan with nonstick cooking spray.

Beat the egg with the milk in a large mixing bowl and add the cooked spaghetti. Toss the noodles to coat well. Spread the noodles on the pizza pan and set aside.

In a medium sized skillet cook the ground beef and the onions until the meat is browned. Drain the grease from the skillet and then stir in the can of tomato sauce and the garlic salad dressing mix.

Spread the ground meat mixture over top of the noodles and then sprinkle the mozzarella and parmesan cheeses on top.

Bake the spaghetti pizza for about 20 minutes or until all of the ingredients are heated through and the cheeses are melted.

Serves 4.

Vegetables - Helpful Cooking Hints & Tips

Blanching Vegetables
When blanching only a small amount of vegetables, place them in a wire sieve and place in boiling water for approximately 40 seconds. Then immediately place them into ice cold water.

Artichoke
They have a protective coating, so do not wash them until ready to use.
Use only stainless steel cookware and utensils for artichokes to prevent discoloring.
Rub all surfaces with lemon to retard browning.
If it is not real fresh, then add 1 tsp of sugar (to add sweetness) and ¼ tsp of salt (to retain their color and taste) to each cup of water used.
